How to Cook Salt and Pepper Calamari


Serves 4 – 5 pax

Preparation of calamari (squid)

280g of squid

A few dashes of white pepper

1/2 teaspoon of salt

1 tablespoon of Chinese white rice wine

1 egg 2 tablespoons of cornflour

4 tablespoons of tapioca flour Some tapioca flour (to further coat the coated squid)

Other ingredients :

4 cloves of chopped garlic

1 piece of red chilli – deseeded & chopped

1/2 teaspoon of salt (add more to taste)

1/2 teaspoon of white pepper (add more to taste) Some chopped spring onion!
